Chocolate Mousse Recipe

An alkaline diet has its ups and downs as does a keto diet and giving up sweets can be a challenge. Therefore a more friendly diet version of the typical chocolate mousse dessert is below. The flavor is still there but the sugar isn’t.

Practicing this recipe a few different times has let me perfect it to my tastes. First off I’d like to say I love dark chocolate the darker the better- bittersweet range from 70-90%. Therefore giving up chocolate and switching to unsweetened cacao wasn’t as challenging as one would imagine.
Make sure it is cacao and not cocoa.

I took unsweetened coconut milk in a can (it’s better if it has been in the fridge for a few hours and organic) and after shaking it up poured the coconut milk into the blender.
A high speed blender works great.
Then put approximately two to three tablespoons of the unsweetened organic powdered cacao into the blender with the coconut milk.
Blend on high for approximately ten seconds until everything is fully blended.
The mixture will fluff up. It can be eaten with a spoon immediately or put in the fridge for a few more hours to get a more mousse like consistency.
Make sure the fridge isn’t too cold so that the mousse doesn’t freeze over and get too cold.
Another option would be to add in a tablespoon or two of almond or other nut butter.
If one isn’t counting their sugar intake a half a banana would also be a tasty addition.

A nice added touch would also be a teaspoon or two of cinnamon added in when the cacao is added in as well.

What benefit do these ingredients provide?
Cacao does have caffeine in it and if you are trying to avoid that then this may not be a good option1.

The health benefits of cacao may originate from the flavonoids inside2. Flavonoid consumption has reported health benefits such as reducing cardiovascular disease risk factors, improving endothelial function, and delaying age-related cognitive decline2.
